Pork is super cheap and versatile- take advantage! I bought an entire pork loin and broke it down throughout the week. This was one of my favorites. Super easy, yet delicious and stunning. This dish is sure to impress.
SWEET & TANGY PORK CHOPS
PREP: 5 min. COOK: 8 min. TOTAL: 13 min.
INGREDIENTS:
for the pork chops:
4 pork chops
2 tbsp. brown sugar
1 tbsp. balsamic vinegar
1/2 tsp. salt
1/2 tsp. pepper
for the potatoes:
5-6 Yukon gold potatoes
2 handfuls uncooked baby spinach (about 1 cup)
4 tbsp. butter
salt & pepper to taste
INSTRUCTIONS:
Wash and dice potatoes into 1 inch cubes. Add potatoes to a pot of cold water and ring to a boil. Simmer for 15 minutes or until fork tender.
Preheat broiler on high.
In a bowl, combine brown sugar, balsamic vinegar, salt, and pepper to form your marinade.
Coat pork chops in marinade and place on a rimmed baking sheet.
Broil for 4 minutes on each side, flipping halfway through.
Add uncooked spinach to the pot of boiling potatoes until wilted.
Drain potatoes and spinach and add them back to the pot with butter, salt and pepper. Mash and adjust seasoning as needed.
optional: in a small sauce pan heat 1 table spoon of olive oil with 1/4 teaspoon of garlic. Add in a handful of spinach and wilt. Use as garnish.
Serve Sweet & Tangy Pork Chops over a bed of Spinach Mashed Potatoes and garnish with wilted spinach.
