I am going to start with saying that this recipe is no way authentic, but it tastes delicious and gets the job done! Also, if you guys have any recipes for good authentic Mexican rice, please send them my way!

SIMPLE MEXICAN STYLE RICE
PREP: 5 min. COOK: 20 min. TOTAL: 25 min.
INGREDIENTS:
1 cup white rice
2 cups water
1 tbsp. vegetable oil
1/2 tsp. garlic
1/2 tsp. caldo de tomate
1/2 tsp. caldo de pollo
1/4 tsp. cumin
1/2 yellow onion
INSTRUCTIONS:
Heat vegetable oil in a pan over medium-high heat.
Add in rice and onions and cook until rice turns golden brown on the edges. Add in garlic, caldo de tomate, caldo de pollo, and cumin. Stir to combine and let boil for 2-3 minutes uncovered.
Cover with lid and let cook for about 18 minutes, or until all of the water has been absorbed.
Fluff and serve.
