SIMPLE CHICKEN LETTUCE WRAPS

INGREDIENTS:
leftover chicken (shredded)
1-2 carrots
3 stalks green onion
1 tsp. sugar
1 tsp. soy sauce
1 tbsp. rice vinegar (also works with white wine vinegar)
1 tbsp. olive oil
iceberg lettuce
INSTRUCTIONS:
In a bowl, combined sugar, soy sauce, vinegar, and olive oil. Whisk until well combined.
Shave carrots using a vegetable peeler or mandolin so that they are in thin slices.
Chop green onion into thin slices.
Add shaved carrots and chopped green onions to marinade.
Heat leftover chicken and assemble on lettuce leaves. Top with marinated vegetables.
