Pizza is fun to make, quick to prepare, and when combined with brisket and the right ingredients, you end up with smoky-tangy goodness. I cheated a bit today and relied on a good deal of store-bought ingredients to allow for a quick meal. Sooner than later, I will post a recipe for pizza made from scratch, but for now, here's the recipe for a quick weekday meal.
SMOKY BRISKET PIZZA
INGREDIENTS:
1 store bought pizza dough or crust (I used H-E-B Traditional Thin and Crispy 12 Inch Pizza Crusts®)
1/2 cup pizza sauce (I used Del Grosso Pappy Fred's Old Style Pizza Sauce®)
1/2 cup Sweet Baby Ray's Barbecue Sauce
1/2 red onion, sliced
1/2-1 cup leftover brisket
1 handful cherry tomatoes, halved (Roma work great too)
3 slices mozzarella cheese or 1 handful shredded
1/2 cup smoked cheddar cheese, shredded
optional: pickled jalapeños
1/2 teaspoon Maldon or freshly ground Himalayan salt
INSTRUCTIONS:
Follow the instructions on the package for the dough or crust and preheat the oven.
In a bowl, mix together the BBQ and pizza sauce.
Generously spread your desired amount of pizza sauce onto the crust. Top with smoked cheddar cheese (don't skimp on this cheese as it gives the pizza a rich smoky flavor), mozzarella, red onion, brisket, cherry tomatoes, and pickled jalapeños.
Place in oven for directed cooking time, until sides are crisp and cheese is melted.
Let rest for 5 minutes before serving. Top with a pinch of finishing salt and serve.
