This garlicky white rice is a daily side dish in Peru and childhood favorite of mine. It complements any dinner as a side, or can serve as a base to many other meals! You're welcome in advance, for how fantastic your kitchen is going to smell.

PERUVIAN GARLIC RICE
A garlicky compliment to any meal whether it be eaten alone, as a side dish, or as a base to other dishes.
PREP: 5 min. COOK: 20 min. TOTAL: 30 min.
INGREDIENTS
2 cups white rice
3 cloves of garlic - minced
1 tbsp. olive or vegetable oil
1 1/2 tsp. salt
4 cups boiling water
INSTRUCTIONS
Heat the oil and garlic in a medium saucepan over medium heat, about 3 minutes.
Add in 4 cups of water and bring to a boil. Stir in the rice and salt.
Cover tightly, reduce the heat to low, and cook until all of the liquid is absorbed, about 20 minutes. Fluff with a fork and serve.
