Yet another idea for those pot roast leftovers! These sandwiches are super savory and 100% satisfying. Topped with sweet caramelized onions, pungent Swiss cheese, and a tangy spicy mustard aioli, you'll find it hard to resist going back for seconds.
LEFTOVER POT ROAST SANDWICHES
PREP: 10 min. COOK: 30 min. SERVINGS: 4 sandwiches
INGREDIENTS:
2 tsp. Olive Oil
1 Medium Yellow Onions, sliced
1 ½ cup Leftover Pot Roast, Warmed
4 Slices Swiss Cheese
¼ cup Mayonnaise
1 tsp. Spicy Mustard
4 dinner rolls/French rolls (I used the Mini Kaiser Rolls from H-E-B's Bakery)
INSTRUCTIONS:
Heat the oil in a non-stick skillet over medium low heat. Add the onion slices and toss to coat with the oil. Cook for 20-30 minutes, stirring occasionally, until the onions are soft and golden brown. Set aside.
Preheat oven to 350°F.
Slice the rolls in half. In the same pan, add a bit of olive oil over medium-low heat and toast the buns until golden brown.
Pile each one with the pot roast, caramelized onions, and Swiss cheese.
In a bowl, whisk together the mayonnaise and mustard. Slather about one tablespoon of sauce on each sandwich.
Wrap the sandwiches in foil (or just cover the baking sheet tightly with foil) and return to the oven for 5-10 minutes, or until cheese is melted and sandwiches are hot. Serve immediately.
