*Leftover* Pork Rib Tacos

Ever wonder what to do with all of those leftovers from the backyard barbecue you had this past weekend? Look no further- because in about 15 minutes, those leftovers can be transformed into the perfect tacos for Taco Tuesday!



 

*LEFTOVER* PORK RIB TACOS

 

PREP: 10 min. COOK: 5 min. TOTAL: 15 min.

 

INGREDIENTS:

  • 5 leftover pork ribs

  • 2 limes, cut into wedges

  • 1/2 head of cabbage, shredded

  • tortillas

  • queso fresco, optional

INSTRUCTIONS:

  • Run a sharp knife down the rib bone to release the meat from the bone. Repeat until all of the rib meat has been removed from the bones.

  • Once all of the meat has been removed, cut the strips of meat into bite-size pieces.

  • Heat a skillet over low heat and add in the meat. Stir occasionally. Note: The goal is not to cook the meat, as it has already been cooked- just to warm it.

  • In the meantime, heat some of the tortillas up in a pan or over the flame on the grate of a gas stove until slightly crisp.

  • Once the meat has warmed up, turn off the burner and squeeze in about 1 teaspoon of lime juice. Mix well to combine.

  • Add the rib meat to the tortillas and top liberally with cabbage and queso fresco.

  • Serve warm with a wedge of lime.
