These turnovers are a perfect way to use leftover ham for the holidays. Whether you make them for a meal or as an appetizer for a party, you will find it hard to stop eating them.
CHEESY HAM & SPINACH TURNOVERS
INGREDIENTS:
2 tbsp. butter
1 sweet onion sliced thin
2 cups spinach, raw
1/2 tsp. minced garlic
salt and pepper to taste
2 sheets frozen puff pastry, thawed according to directions on package
1/2 cup dijon mustard
2 tsp. worcestershire sauce
pinch of cayenne to taste
leftover ham, diced or sliced deli ham
1 & 1/2 cups grated Swiss cheese, or sliced cut into 1/4ths
1 egg, beaten
1 tbsp. water
poppy seeds, for garnish
INSTRUCTIONS:
Preheat oven to 350ºF.
Heat a large skillet over medium-high heat and add in the butter. Add in the onions and cook for about 10 minutes, or until softened. Add in the garlic, spinach, salt and pepper and cook until the spinach has wilted.
Roll out the puff pastry sheets and cut each sheet into 9 squares (18 squares total).
Place squares on a piece of wax paper or parchment paper (this will prevent sticking).
In a small bowl, whisk together the mustard and worcestershire sauce. Brush the mustard mix lightly on each square of puff pastry, being sure to avoid the edges.
Divide the onion, ham, and spinach mixture among the 18 squares, top with swiss cheese. Don't overfill, otherwise it will be difficult to seal the edges.
Brush egg wash around the perimeter of each pastry square and carefully fold dough over filling to create triangles. Pinch the edges closed to create a good seal, a fork works just fine as well.
Generously brush the top of each turnover with egg wash, sprinkle with poppy seeds.
Place on a parchment paper lined baking sheet.
Bake for 15 to 20 minutes or until lightly golden.
Serve immediately.
