This is probably one of my favorite, truly indulgent side dishes. My mom has been making it for years and I absolutely love it. This cauliflower gratin is insanely creamy and has a really nice bite due to the goat cheese and parmesan. I hope you guys love it as much as I do!
CAULIFLOWER GOAT CHEESE GRATIN
PREP: 15 min. COOK: 30 min. TOTAL: 45 min.
INGREDIENTS:
1 head cauliflower, cut into florets
2 cups heavy cream
1/2 lb. Monterrey Jack cheese, grated
2 cups grated parmesan
6 oz. goat cheese, cut into small pieces
salt to taste
freshly ground pepper to taste
INSTRUCTIONS:
Preheat oven to 400ºF.
In a baking dish, layer the cauliflower, heavy cream, and 3 cheeses evenly.
Season the dish with salt and pepper.
Roast for 25-30 minutes or until the cauliflower is fork tender and the sauce has slightly thickened.
Remove from the oven and let the dish rest for at least 10 minutes, which will allow the sauce to thicken a bit more.
Serve warm and enjoy!
