BROWN SUGAR MUSTARD GLAZED HAM
INGREDIENTS:
8-10 pound bone-in fully cooked ham
1 cup yellow mustard
4 cups brown sugar
6 limes, squeezed
INSTRUCTIONS:
Preheat oven to 325ºF.
Remove the packaging from the ham and score a diamond pattern on the rind. Place in a baking pan with a rack. Fill the bottom of the pan with about a 1/3 cup of water. Cover with foil and bake for about 30 minutes while you prepare the sauce.
In a large sauce pan, melt together the mustard and sugar until the sugar has completely dissolved. Stirring frequently.
Once the sugar has dissolved, remove the pan from the heat and squeeze in the lime juice. Stir to incorporate.
After 30 minutes of baking, remove the ham from the oven and discard the foil. Increase the temperature of the oven to 425ºF. Glaze the ham with about 1/3 cup of the sauce being sure to get the sauce in all of the cracks. Return the ham to the oven, uncovered, and bake for another 15 minutes.
Remove the ham from the oven again and glaze with another 1/3 cup of the sauce and some of the pan juices. Return to the oven for another 15 minutes.
Remove the ham from the oven and let rest for 10 - 20 minutes.
Carve and serve with the remainder of the sauce on the side.
