1 lb. asparagus
1 package brussel sprouts
1 can beer (I used Miller Lite)
2 cups of all purpose flour
1 tsp. cayenne pepper
1 tsp. salt
1 tsp. pepper
Peanut or alternative oil, for frying
for the sauce:
1/4 cup mayo
1/4 cup ketchup
1 tbsp. sriracha
1/2 tsp. cayenne
1/4 tsp. salt
juice from 1/2 a lemon, squeezed
INSTRUCTIONS:
for the veggies:
Fill a frying pan with about a half inch of oil and heat to 375ºF.
In a large mixing bowl, add in the beer followed by the flour, cayenne, salt, and pepper. Whisk together until fully incorporated and free of clumps.
Prep the veggies by trimming the ends if needed and washing.
Coat the veggies in the batter and allow excess batter to drip off.
Place in the oil and fry until golden brown. Remove from oil and allow to drain on a plate lined with paper towels.
for the sauce:
In a bowl mix together the mayo, ketchup, sriracha, cayenne, salt, and lemon juice.
